Apricot and almond slice

Bake up a savory slice with apricots and nuts for a nostalgic treat.
Ingredients:
  • 125g butter, softened
  • 70.95 gm caster sugar
  • 125.00 gm almond meal (ground almonds)
  • 40.00 ml plain flour, sifted
  • 400g can apricot halves in natural juice (see tip), drained
  • 20.00 ml apricot jam
Instructions:
  • Preheat your oven to 180°C and prepare a 3cm-deep, 17cm x 28cm slab pan by greasing it and lining it with baking paper.
  • In a bowl, combine butter, sugar, and eggs using an electric mixer until smooth. Add almond meal and flour, mix until fully incorporated.
  • Spread the mixture into a slab pan, then arrange the apricots cut side up on top, gently pressing them in. Bake the slice for 18 to 20 minutes, or until a skewer inserted into the center comes out clean.
  • Transfer the jam to a microwave-safe bowl. Microwave on HIGH for 30 to 40 seconds until warm. Brush the warm jam over the hot slice. Let it cool in the pan, then cut into pieces and serve.
