Indulge in a decadent apricot and passionfruit trifle dessert.
Ingredients:
  • 150ml thickened cream
  • 600g carton vanilla custard
  • 6 large sponge finger biscuits, chopped
  • 825g can apricot halves in natural juice, drained
  • 125.00 ml fresh passionfruit pulp (see note)
Instructions:
  • With an electric mixer, whip cream until soft peaks form. Fold in custard gently until well combined. Divide and spoon 1 tablespoon of the custard mixture into the base of each of the four 1 3/4-cup capacity serving glasses.
  • Layer one-third of the biscuits and half of the apricots in a dish. Drizzle with some passionfruit pulp and half of the remaining custard mixture. Repeat layers. Top with a dollop of custard mixture and the remaining biscuits. Drizzle with the remaining passionfruit pulp. Serve.
