Apricot and Peach Fried Pies

Sweet dried apricots and peaches simmered to perfection, inside a crisp, golden hand pie.
Ingredients:
  • 4 cups all-purpose flour
  • 2 teaspoons salt
  • 1 cup shortening
  • 1 cup milk
  • 8 ounces dried apricots
  • 1 (6 ounce) package dried peaches
  • water to cover
  • 2 cups vegetable oil for frying
Instructions:
  • Prepare the Crust: Combine flour and salt in a large bowl. Add shortening and mix until crumbly. Stir in milk until a dough forms. Roll out the dough and cut it into 18 rounds measuring 6 inches each. Set aside.
  • In a large saucepan, simmer apricots, peaches, and sugar with enough water to cover until fruit is tender. Uncover and cook until liquid is absorbed.
  • In a small high-sided skillet, heat oil or shortening over medium heat. Fill each pastry circle equally with the filling, fold in half, and seal edges using a fork dipped in cold water.
  • Fry a small batch of pies in hot oil until golden on both sides, and then let them drain on paper towels.
