Apricot bread custards

Elevate your special occasion with decadent apricot bread custard treats.
Ingredients:
  • 8 slices day-old white bread, crusts removed
  • 80g apricot jam
  • 45g dried apricot
  • 20.00 gm caster sugar
  • 4.40 gm vanilla essence
  • 20.00 ml slivered almonds
Instructions:
  • Preheat the oven to 180°C. Generously coat each slice of bread with the flavorful jam, then cut them into quarters. Layer half of the bread, jam side up, into four 1/2 cup (125ml) ovenproof dishes or ramekins. Sprinkle generously with the delicious apricots.
  • Combine the milk, eggs, sugar, and vanilla in a jug and whisk together. Pour half of the mixture over the bread. Layer the remaining bread on top and pour over the rest of the egg mixture.
  • Top with a generous sprinkle of almonds. Place on a baking sheet and bake custards for 25 minutes or until golden brown. (Note: Custards will deflate as they cool.)
