Delicious apricot cheesecake bars with a buttery cookie crust and a perfect balance of sweetness and tanginess.
Ingredients:
  • 16 ounces shortbread cookies
  • 3 large eggs
  • 0.5 cup white sugar
  • 1 (15 ounce) container ricotta cheese
  • 1 (8 ounce) package cream cheese, softened
  • 1 teaspoon vanilla extract
  • 0.33333334326744 cup finely chopped dried apricots
  • 0.5 cup sour cream
  • 0.5 cup apricot preserves
Instructions:
  • Preheat the oven to a toasty 350°F (175°C).
  • Finely grind shortbread cookies in a food processor, then press into a 9x13-inch baking pan.
  • In a bowl, combine eggs and sugar until light and fluffy. Add ricotta cheese, cream cheese, and vanilla extract; mix until smooth. Gently fold in apricots, then spread mixture over crust.
  • Bake in the oven until beautifully puffed up with slightly browned edges, approximately 40 minutes.
  • Combine creamy sour cream with sweet apricot jam in a bowl and set aside.
  • Once the cheesecake is out of the oven, generously spread the jam topping over the hot surface. Allow it to chill until fully set, which typically takes 1 to 2 hours. Slice into 24 delectable bars.
