Apricot Cheesecake Bars

Indulge in this luxurious and creamy cheesecake for a truly decadent treat.
Ingredients:
  • 2 cups Gold Medal™ all-purpose flour
  • 3/4 cup butter or margarine, softened
  • 1/3 cup light corn syrup
  • 2 packages (8 ounces each) cream cheese, softened
  • 1 cup light corn syrup
  • 2 teaspoons vanilla
  • 3/4 cup apricot preserves
  • Powdered sugar, if desired
Instructions:
  • Preheat the oven to 375°F. Grease a 13x9x2-inch rectangular pan. In a large bowl, mix flour, butter, granulated sugar, 1/3 cup corn syrup, and salt with an electric mixer on low speed until dough forms. Press the dough evenly into the pan.
  • In a medium bowl, whip cream cheese until smooth on medium speed. Add eggs and beat until well combined. Stir in 1 cup of corn syrup and vanilla until mixture is smooth. Pour over the dough.
  • Bake for 35 to 40 minutes until edges are lightly golden brown and filling is set. Allow bars to cool slightly, then stir preserves and spread over the bars. Refrigerate for at least 3 hours until chilled.
  • To make 64 bars, cut into 8 rows by 4 rows. Then cut each bar diagonally in half. Dust with powdered sugar right before serving and store covered in the refrigerator.
