Surprise your senses with a delightful apricot pudding.
Ingredients:
  • 196.88 gm apricot nectar
  • 250.00 ml dried apricots, roughly chopped
  • 2 to 41.20 gm milk
  • 340g packet golden buttercake cake mix
  • 60g butter, softened
  • 82.50 ml apricot jam
Instructions:
  • Preheat your oven to 180°C. Grease a muffin pan with 1/3-cup capacity and line the base of each hole with baking paper.
  • Microwave apricot nectar until hot, about 1 minute on HIGH. Pour over dried apricots, cover, and let stand for 10 minutes. Drain the apricots, saving the liquid. Combine reserved liquid with milk in a jug to make 3/4 cup total.
  • Combine cake mix, eggs, butter, and apricot nectar in an electric mixer. Mix on low speed until just combined, then increase to medium speed and beat for 4 minutes, scraping down the sides of the bowl occasionally.
  • Mix jam and dried apricots together, then distribute evenly into muffin holes. Top with cake mixture until each muffin hole is three-quarters full. Bake for 12 minutes or until a skewer comes out clean when inserted into the center. Serve and enjoy!
