Arakas Latheros (Greek Peas with Tomato and Dill)

Greek pea stew with tomato, dill, and olive oil, served with crusty bread and feta.
Ingredients:
3tablespoons olive oil
6green onions, chopped
1 (16 ounce) packagefrozen peas
1cupcrushed tomatoes
1potato, peeled and cut into wedges
0.5 cupchoppedfresh dill
0.5 cupwater, or as needed
Instructions:
In a saucepan over medium heat, sauté onions in olive oil until soft and fragrant, about 5 minutes. Stir in peas, tomatoes, potato, dill, salt, and pepper. Add water if needed for desired consistency.
Stir well and bring to a vigorous boil. Reduce heat and simmer, partially covered, until peas and potato are tender, approximately 30 minutes. Be sure any excess liquid from the tomatoes has cooked off before serving.
