Greek pea stew with tomato, dill, and olive oil, served with crusty bread and feta.
Ingredients:
  • 3 tablespoons olive oil
  • 6 green onions, chopped
  • 1 (16 ounce) package frozen peas
  • 1 cup crushed tomatoes
  • 1 potato, peeled and cut into wedges
  • 0.5 cup chopped fresh dill
  • 0.5 cup water, or as needed
Instructions:
  • In a saucepan over medium heat, sauté onions in olive oil until soft and fragrant, about 5 minutes. Stir in peas, tomatoes, potato, dill, salt, and pepper. Add water if needed for desired consistency.
  • Stir well and bring to a vigorous boil. Reduce heat and simmer, partially covered, until peas and potato are tender, approximately 30 minutes. Be sure any excess liquid from the tomatoes has cooked off before serving.
