Arancini balls recipe

Savory risotto balls with beef and tomato paste for a burst of delicious flavor.
Ingredients:
  • 1 litre salt reduced chicken style liquid stock
  • 36.40 gm olive oil
  • 1 small brown onion, finely chopped
  • 1 garlic clove, crushed
  • 200.00 gm arborio rice
  • 60g beef mince
  • 40.00 ml tomato passata
  • 500.00 ml panko breadcrumbs
  • 3 eggs, lightly beaten
  • 20g mozzarella, cut into 1cm cubes
  • Olive oil cooking spray
Instructions:
  • In a large saucepan, bring the stock to a boil over high heat with the lid on. Once boiling, lower the heat to a simmer.
  • In a medium saucepan over medium heat, heat half of the oil. Sauté onion and garlic for 5 minutes until softened. Stir in rice and cook for 1 minute. Pour in 1/3 cup stock and stir for 3 to 4 minutes until absorbed. Repeat with remaining stock, adding 1/3 cup at a time, until rice is tender and creamy. Transfer to a 3cm-deep, 20cm x 30cm baking pan, cover, and refrigerate for 1 hour until cold.
  • In a small frying pan over medium-high heat, heat the remaining oil. Add the mince and cook for 5 to 6 minutes, stirring with a wooden spoon until browned and cooked through. Stir in the passata and cook for an additional 2 to 3 minutes until thickened. Remove from heat and let cool.
  • Preheat the oven to 200°C/180°C fan-forced. Line a baking tray with baking paper. Spread breadcrumbs on a plate, then mix 2 tablespoons of water into the eggs until well combined.
  • With damp hands, shape 1/4 cup of risotto mixture into a ball, then press a hole in the center. Fill the hole with 1 teaspoon of mince mixture and a piece of mozzarella. Encase the fillings within the risotto mixture. Repeat with the rest of the risotto, mince, and cheese to create 8 balls. Mold them into cone shapes.
  • Coat each cone in egg, then breadcrumbs, and arrange on tray. Repeat with the rest of the arancini. Chill for 30 minutes before serving.
  • Generously coat the arancini with oil for a crispy finish. Bake until they turn a beautiful golden brown and are heated through. Enjoy them hot or cold.
