Zesty Lime Chicken Rice: A vibrant and flavorful one-pot meal for a leisurely Sunday.
Ingredients:
  • 1 tablespoon olive oil
  • 1 teaspoon minced garlic
  • 1 teaspoon dried basil
  • salt to taste
  • 0.5 teaspoon pepper
  • 1 (4 ounce) skinless, boneless chicken breast half - cut into bite-size pieces
  • 2 tablespoons olive oil, divided
  • 2 tablespoons minced garlic
  • 1 onion, chopped
  • 2 fresh jalapeno pepper, seeded and chopped
  • 2 tomatoes - peeled, seeded, and coarsely chopped
  • 1 teaspoon turmeric powder
  • 1 cup uncooked white rice
  • 1 lime, juiced
  • 2 bay leaves
  • 1 cup chicken stock
  • 1.5 cups water
  • 3 tablespoons chopped cilantro
Instructions:
  • Combine olive oil, minced garlic, fresh basil, salt, and black pepper in a small bowl for a flavorful marinade. Coat the chicken with the mixture, cover, and let it marinate in the refrigerator overnight for maximum flavor infusion.
  • In a small saucepan over medium-high heat, sauté chicken in 1 tablespoon of olive oil until cooked; set aside. Add the remaining 1 tablespoon of olive oil and sauté garlic and onion until translucent. Add jalapeno, chopped tomatoes, salt, and turmeric; cook for 2 minutes. Mix in rice, then add half of the lime juice, bay leaves, chicken stock, water, and the cooked chicken. Bring to a boil, then simmer covered on low heat for 25 minutes, stirring occasionally. Remove from heat, discard bay leaves, and stir in remaining lime juice and cilantro.
