Zesty Lime Chicken Rice: A vibrant and flavorful one-pot meal for a leisurely Sunday.
Ingredients:
1tablespoonolive oil
1teaspoonmincedgarlic
1teaspoondried basil
salt to taste
0.5 teaspoonpepper
1 (4 ounce) skinless, boneless chicken breast half - cut into bite-size pieces
2tablespoons olive oil, divided
2tablespoons mincedgarlic
1onion, chopped
2fresh jalapeno pepper, seeded and chopped
2tomatoes - peeled, seeded, and coarsely chopped
1teaspoonturmeric powder
1cupuncookedwhite rice
1lime, juiced
2bay leaves
1cupchicken stock
1.5 cups water
3tablespoons choppedcilantro
Instructions:
Combine olive oil, minced garlic, fresh basil, salt, and black pepper in a small bowl for a flavorful marinade. Coat the chicken with the mixture, cover, and let it marinate in the refrigerator overnight for maximum flavor infusion.
In a small saucepan over medium-high heat, sauté chicken in 1 tablespoon of olive oil until cooked; set aside. Add the remaining 1 tablespoon of olive oil and sauté garlic and onion until translucent. Add jalapeno, chopped tomatoes, salt, and turmeric; cook for 2 minutes. Mix in rice, then add half of the lime juice, bay leaves, chicken stock, water, and the cooked chicken. Bring to a boil, then simmer covered on low heat for 25 minutes, stirring occasionally. Remove from heat, discard bay leaves, and stir in remaining lime juice and cilantro.
