Artichoke and bean salad

Whip up a vibrant side salad for your next family meal!
Ingredients:
  • 400g can cannellini beans
  • 250.00 ml broad beans, peeled, thawed
  • 4 marinated artichoke hearts, quartered
  • 36.40 gm extra virgin olive oil
  • 21.00 gm lemon juice
  • 20.00 ml white balsamic vinegar
  • 20.00 ml fresh continental parsley, chopped
Instructions:
  • Rinse a 400g can of cannellini beans and mix them with 1 cup of thawed, peeled broad beans and 4 quartered marinated artichoke hearts in a bowl.
  • Combine 2 tablespoons extra virgin olive oil, 1 tablespoon lemon juice, 1 tablespoon white balsamic vinegar, and 1 tablespoon chopped fresh continental parsley in a small bowl. Drizzle the mixture over the beans.
  • Gently mix in the seasoning.
