Family-friendly Swedish pancakes with vanilla and nutmeg for a delicious breakfast or brunch.
Ingredients:
  • 4 eggs
  • 4 cups milk
  • 2.5 cups all-purpose flour
  • 0.5 cup white sugar
  • 0.5 teaspoon vanilla extract
  • 0.5 teaspoon ground nutmeg
  • 0.5 cup butter, melted
  • 1 teaspoon butter
Instructions:
  • In a large bowl, beat eggs until smooth. Add milk, flour, sugar, vanilla extract, nutmeg, and salt; whisk until just combined. Stir in 1/2 cup melted butter until batter is very thin and slightly lumpy.
  • Preheat a nonstick griddle over medium-high heat and generously brush with 1 teaspoon of butter. Pour batter onto the griddle to make 6-inch pancakes. Cook until bubbles form and the edges are dry, about 30 seconds to 1 minute. Flip and cook the other side until dry, about another 30 seconds to 1 minute. Repeat with the rest of the batter.
