African-inspired slow-cooker chicken, sweet potato, and peanut soup with a unique flavor twist using pantry basics like peanut butter, canned tomatoes, and spices.
Ingredients:
  • 2 tablespoons olive oil
  • 2 large skinless, boneless chicken breast halves
  • 1 onion, chopped
  • 2 red bell peppers, sliced
  • 1 (28 ounce) can crushed tomatoes
  • 2 sweet potatoes, peeled and cut into bite-size pieces
  • 3 cups sliced carrots
  • 4 cups chicken broth, or more as needed
  • 0.5 teaspoon curry powder
  • 0.5 teaspoon ground cumin
  • 0.25 teaspoon chili powder
  • 0.25 teaspoon cayenne pepper
  • 0.25 teaspoon crushed red pepper flakes
  • 0.25 teaspoon ground cinnamon
  • 0.25 teaspoon ground black pepper
  • 1 cup brown rice
  • 1 cup crunchy peanut butter
Instructions:
  • In a skillet over medium heat, sizzle the chicken breasts in olive oil until golden brown, about 5 minutes per side. Transfer the seared chicken to a slow cooker. Saute onions, red bell peppers, and garlic in the same skillet until onions are translucent, about 5 minutes. Add the sauteed veggies to the slow cooker.
  • Combine crushed tomatoes, sweet potatoes, carrots, chicken broth, curry powder, cumin, chili powder, cayenne pepper, red pepper flakes, cinnamon, and black pepper in the slow cooker. Cook on High for 5 to 6 hours, or on Low for 10 hours, adding more chicken broth if necessary. Enjoy your flavorful dish slowly simmering to perfection.
  • Combine the brown rice three hours before serving and incorporate the peanut butter at least one hour before serving. Shred the chicken meat and serve hot.
