Autumn's indulgent apple cider doughnuts - fried perfection coated in sweet cider glaze. Perfect for breakfast or any celebration!
Ingredients:
  • 1 cup apple cider
  • 0.25 cup butter, at room temperature
  • 2 eggs
  • 0.5 cup buttermilk
  • 3.5 cups all-purpose flour, or more as needed
  • 2 teaspoons baking powder
  • 0.5 teaspoon ground cinnamon
  • 0.125 teaspoon ground nutmeg
  • 2 cups vegetable oil for frying, or as needed
  • 1 cup confectioners' sugar
  • 2 tablespoons apple cider
Instructions:
  • Simmer 1 cup of apple cider in a small pot until it reduces to 1/4 cup, approximately 10 minutes. Allow the pot to cool to room temperature after removing it from the heat.
  • Cream the white sugar and butter together using an electric mixer until smooth. Add eggs one at a time, beating well after each addition. Incorporate buttermilk and reduced apple cider into the creamy butter mixture.
  • Combine flour, baking powder, baking soda, cinnamon, salt, and nutmeg in a bowl. Gradually mix the flour mixture into the creamed butter mixture until just combined.
  • Transfer dough to a lightly floured parchment paper. Sprinkle with flour and roll to 1/2-inch thickness as needed to prevent sticking. Use a 3-inch-wide doughnut cutter to cut doughnuts. Place on a baking sheet and chill in the refrigerator for 20 to 30 minutes.
  • Heat a minimum of 3 inches of oil in a deep-fryer or large saucepan until it reaches 350°F (175°C).
  • Combine confectioners' sugar and 2 tablespoons of apple cider in a bowl, whisking until a smooth glaze forms.
  • Fry 2 to 3 doughnuts at a time in hot oil until golden brown on each side, about 1 to 2 minutes per side. Use a slotted spoon to remove them and place on paper towels to drain. Pour glaze over the warm doughnuts.
