Savory ground beef and rice in a comforting bell pepper soup.
Ingredients:
  • 1.5 pounds 90%-lean ground beef
  • 1 large sweet onion, chopped
  • salt and ground black pepper to taste
  • 4 bell peppers, stemmed and chopped
  • 6 cups chicken stock
  • 2 cups prepared salsa
  • 2 cups tomato sauce
  • 2 cups chopped canned tomatoes
  • 1 cup canned black beans, drained
  • 2 cups cooked rice
  • 2 cups frozen corn
Instructions:
  • Begin by heating a Dutch oven over medium-high heat. Brown the beef, onion, salt, and pepper until crumbly, which should take around 5 to 7 minutes. Once browned, drain and discard any grease. Next, add the bell peppers and cook until softened, approximately 5 minutes.
  • Combine chicken stock, salsa, tomato sauce, canned tomatoes, black beans, and ground beef in a pot and bring it to a boil. Lower the heat to medium and let it simmer for 45 minutes. Stir in rice and corn and simmer for an additional 30 minutes. Season with salt and pepper to taste.
