Summer squash, tomatoes, and basil baked in foil for a simple and delicious dish with minimal cleanup.
Ingredients:
  • 4 sheets Reynolds Wrap® Heavy Duty Aluminum Foil
  • 2 medium yellow squash, cut into 1/2-inch slices
  • 2 large Roma tomatoes, cut into wedges
  • 1 medium onion, chopped
  • 4 tablespoons butter, melted
  • 0.25 cup chopped fresh basil
  • Salt and pepper to taste
  • 0.25 cup shredded Parmesan cheese
Instructions:
  • Preheat oven to a toasty 450 degrees F.
  • On a sheet of Reynolds Wrap® Heavy Duty Aluminum Foil, arrange 1/4 of the vegetables in the center. Drizzle with butter, sprinkle with basil, salt, and pepper.
  • Wrap the vegetables in foil by bringing up the sides and folding down two times. Double fold both ends to seal the packet, ensuring there is room for heat circulation inside. Repeat to make a total of four packets. Arrange the packets on a baking sheet with 1-inch sides.
  • Bake on the cookie sheet for 15 to 18 minutes.
  • Carefully open the packets by slicing next to the top fold with a sharp knife to release steam. Sprinkle 1 tablespoon of Parmesan cheese over the vegetables in each packet.
