Quick and affordable Asian chicken noodle soup with only 6 ingredients!
Ingredients:
  • 87.50 gm Malaysian curry paste
  • 2 green onions, thinly sliced
  • 425g can corn kernels, drained
  • 500.00 ml shredded barbecued chicken (see note)
  • 1020.00 gm chicken style liquid stock
  • 220g shelf-fresh Singapore noodles
Instructions:
  • In a large non-stick saucepan over medium heat, sizzle curry paste with half the onion until fragrant, about 1 minute. Stir constantly.
  • Combine the corn, chicken, 1 cup of cold water, and stock in a pot. Bring it to a boil, then add the noodles. Simmer for 5 to 6 minutes until the noodles are tender. Serve topped with the remaining onion. Enjoy!
