Asian chicken, corn and noodle soup

Whip up a quick and delicious chicken corn soup with some clever kitchen hacks.
Ingredients:
  • 2 x 72g pkts 2 Minute Noodles Chicken Flavour
  • 420g can creamed corn
  • 42.00 gm soy sauce
  • 5cm-piece ginger, peeled, cut into matchsticks
  • 1 bunch baby choy sum, chopped
  • 500.00 ml shredded skinless Hot Roast Chicken
  • 2 spring onions, thinly sliced diagonally
  • Lime wedges, to serve
Instructions:
  • In a large saucepan over high heat, mix the two flavor sachets from the Maggi 2 Minute Noodles with corn, soy sauce, ginger, and 6 cups (1.5L) water. Bring to a boil, then break the dry noodles into quarters.
  • Stir in the noodles and let them simmer in the soup mixture, uncovered, for 1 minute.
  • Combine the choy sum, chicken, and half of the spring onion in the soup pot. Simmer without a lid for 2 minutes until the noodles and choy sum are tender.
  • Serve the soup in bowls, garnish with the remaining spring onion, and accompany with lime wedges.
