Savory Chinese BBQ duck omelette - a quick and flavorful Asian fusion delight.
Ingredients:
  • 2 eggs, lightly whisked
  • 20.00 gm water
  • 4.60 gm peanut oil
  • 1 tsp sesame oil
  • 1/2 Chinese barbecued duck, bones removed, coarsely shredded
  • 100g bean sprout
  • 1 bunch baby choy sum, trimmed
  • 60ml oyster sauce
  • 2 tsp finely grated ginger
  • 125.00 ml coriander leaves
Instructions:
  • In a bowl, combine the egg with water and whisk until smooth. Heat peanut oil in a wok over high heat. Pour in the egg mixture and swirl to create a thin omelette. Cook until lightly golden and set, about 1-2 minutes. Transfer to a large serving plate.
  • Heat up the wok with sesame oil. Cook duck, bean sprouts, and choy sum until heated and slightly wilted. Stir in oyster sauce and ginger until heated. Take it off the heat.
  • Spread the duck mixture over one side of the omelette, then fold the other half over to cover it. Garnish with fresh coriander leaves and enjoy right away.
