Asian Peanut Chicken Tenders

Asian-inspired tenders with zesty ginger, lime, and peanut flavors.
Ingredients:
  • 2 tablespoons teriyaki sauce
  • 1 tablespoon creamy peanut butter
  • 1 tablespoon lime juice
  • 1/2 teaspoon ground ginger
  • 1 egg
  • 1/2 cup Progresso™ plain panko crispy bread crumbs
  • 1/2 cup finely chopped salted dry-roasted peanuts
  • 1 package (14 oz) uncooked chicken tenders (not breaded)
Instructions:
  • Combine the Peanut Sauce ingredients in a medium bowl, cover, and chill in the refrigerator until serving.
  • Preheat oven to 400°F and lightly grease a large cookie sheet. In a shallow bowl, whisk the egg. In a large resealable plastic bag, combine bread crumbs and peanuts. Dip chicken into egg, then coat in bread crumb mixture by shaking in the bag. Place coated chicken on prepared cookie sheet.
  • Roast chicken for 15 to 20 minutes, flipping halfway, until fully cooked and bread crumbs are golden brown. Enjoy with sauce.
