Quick and tasty Asian sheet-pan dinner for less cleanup in under an hour!
Ingredients:
  • 2 tablespoons toasted sesame oil
  • 1 teaspoon chili garlic sauce
  • 1 teaspoon soy sauce
  • 1/4 teaspoon salt
  • 1 lb small new potatoes, quartered
  • 2 tablespoons packed brown sugar
  • 2 tablespoons soy sauce
  • 2 tablespoons butter, melted
  • 1 tablespoon natural rice vinegar
  • 4 (4 oz) salmon filets, skin on
  • 1/2 lb fresh broccoli florets (about 4 cups)
  • 2 green onions, sliced on the bias
Instructions:
  • Preheat oven to 425°F and generously coat a large rimmed sheet pan with cooking spray.
  • Combine sesame oil, chili garlic sauce, 1 teaspoon of soy sauce, and 1/4 teaspoon of salt in a large bowl. Toss potatoes in the mixture until coated. Arrange potatoes skin side down on a baking pan and roast for 20 minutes. Remove from oven, flip potatoes skin side up, and create space for broccoli and salmon.
  • Combine brown sugar, 2 tablespoons soy sauce, butter, vinegar, and 1/4 teaspoon salt in a large bowl. Set aside 2 tablespoons of the mixture in a medium bowl. Coat the salmon in the reserved mixture and toss the broccoli in the large bowl until coated. Place salmon and broccoli on top of the potatoes in the pan. Pour any remaining mixture from both bowls over the salmon and broccoli. Roast for 12 to 15 minutes until salmon is cooked through, potatoes are tender, and garnish with green onions.
