Quick and easy vegetarian noodle bowl bursting with Asian flavors from spinach, red bell pepper, and soybeans.
Ingredients:
  • 1 (8 ounce) package egg noodles
  • 3.5 cups vegetable stock
  • 2 tablespoons soy sauce
  • 1 tablespoon chopped fresh ginger
  • 1 teaspoon Asian chile sauce
  • 1 garlic clove, chopped
  • 5.5 ounces frozen spinach, thawed
  • 1.5 cups frozen green soybeans, thawed
  • 1 red bell pepper, sliced
Instructions:
  • 1. Boil a large pot of water until bubbling vigorously. Add noodles and simmer for 1 to 2 minutes until just tender but still with a slight bite. Drain and portion evenly into 4 spacious soup bowls.
  • In a saucepan over medium heat, blend vegetable stock, soy sauce, ginger, chile sauce, and garlic until gently simmering. Let it simmer for about 5 minutes until aromatic.
  • Drain excess moisture by squeezing spinach and then coarsely chop it. Combine with soybeans and red bell pepper in stock, cook until heated through for about 1 minute, then pour over noodles.
