Asparagus, carrot and baby kale slaw

Elevate classic coleslaw with vibrant asparagus and tender baby kale.
Ingredients:
  • 1 bunch asparagus, trimmed
  • 2 carrots, peeled, cut into matchsticks
  • 400g cabbage
  • 500.00 ml baby kale, shredded
  • 3 green onions, thinly sliced diagonally
  • 125.00 ml fresh mint leaves, roughly chopped
  • 123.75 gm mayonnaise
  • 65.63 gm lemon juice
  • 1 1/2 tsp fennel seeds, crushed
Instructions:
  • Cut the asparagus in half horizontally, then slice each piece lengthwise.
  • Mix together the asparagus, carrot, cabbage, kale, onion, and mint in a large bowl.
  • Combine mayonnaise, lemon juice, and fennel seeds in a jug. Season with salt and pepper, then add the mixture to the cabbage. Toss to combine and serve.
