Make a delicious deli-style frittata with fresh ingredients using this simple recipe.
Ingredients:
  • 12 eggs, lightly whisked
  • 125ml cream
  • 40.00 ml finely chopped dill
  • 20g butter
  • 1 leek, white part only, thinly sliced
  • 2 bunches asparagus, trimmed, diagonally cut into 3cm pieces
  • 100g goat's cheese, crumbled
  • 4 slices bread, toasted, to serve
  • Mixed salad leaves, to serve
Instructions:
  • Preheat the grill to high heat. Combine eggs, cream, and dill in a medium bowl. Season generously with salt and pepper.
  • In a spacious frying pan with a 20cm base diameter, heat the butter over medium heat until it starts to foam. Sauté the leek for 5 minutes until softened, then toss in the asparagus and cook for an additional 2 minutes until vibrant green and slightly crisp.
  • Pour the beaten eggs over the sautéed leeks in a pan, stirring gently to combine. Cook on low heat for 4-5 minutes until the frittata is mostly set but the top remains slightly runny. Sprinkle the goat cheese evenly on top and remove from heat.
  • Transfer the frying pan under a preheated grill for 2 minutes until the frittata is firm and the top has a golden hue. Gently release the frittata with a spatula onto a tidy work surface. Slice into wedges and arrange on serving plates. Enjoy promptly with toast and a side of mixed salad leaves, if preferred.
