Asparagus in salmon with nori

Elegant canapés: Asparagus and salmon wrapped in seaweed.
Ingredients:
  • 16 asparagus spears (about 2 bunches), woody ends trimmed
  • 2 nori sheets
  • 16 slices (about 250g) smoked salmon
Instructions:
  • Blanch the asparagus in a pot of boiling water for 2 minutes until vibrant green and crisp-tender. Shock in ice water, then drain.
  • Trim each nori sheet with scissors to create two 19 x 10.5cm rectangles. Then, cut each rectangle into four shorter strips.
  • Take 1 slice of salmon and wrap it around an asparagus spear, then wrap it in a strip of nori with the shiny side facing up. Place it on a serving platter with the seam side down.
