Delicious asparagus salad with grilled lemon asparagus, spinach, Parmesan, and almonds - perfect for summer!
Ingredients:
  • 0.25 cup olive oil
  • 2 tablespoons lemon juice
  • 12 fresh asparagus spears
  • 6 cups fresh spinach leaves
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon seasoned slivered almonds
Instructions:
  • Heat up the outdoor grill on low heat and lightly oil the grate.
  • In a baking dish, mix olive oil and lemon juice. Add asparagus and toss until fully coated.
  • Grill asparagus on the preheated grill, turning occasionally and basting with the remaining oil and lemon juice mixture, until tender-crisp, approximately 5 minutes. Transfer the asparagus from the grill back to the baking dish and chop into bite-sized pieces.
  • In a large bowl, mix together spinach, Parmesan, and almonds. Add the asparagus and any remaining oil-lemon juice mixture from the dish. Toss well and serve promptly.
