Asparagus shines in this elegant dish.
Ingredients:
  • 2 bunches asparagus, woody ends trimmed
  • 10.20 gm vinegar
  • 4 fresh eggs
  • 25g (1/3 cup) finely grated parmesan
Instructions:
  • Heat a large frying pan filled with salted water over medium-high heat until boiling. Add the asparagus and cook for 2-3 minutes until vibrant green and slightly crisp. Use tongs to move the asparagus to a plate and cover to maintain warmth.
  • Add vinegar to water in the pan and reduce heat to medium-low. Crack 1 egg into a small bowl, then use a spoon to create a whirlpool in the water. Gently pour the egg into the center of the whirlpool. Cook for 4 minutes for a soft yolk or until desired doneness. Use a slotted spoon to transfer the egg to a plate, cover with foil to keep warm, and repeat with remaining eggs.
  • Plate the asparagus, then place a cooked egg on top. Season with salt and pepper, and finish by sprinkling with parmesan before serving.
