Asparagus with shaved parmesan, aioli and lemon

Spring asparagus salad with parmesan, lemon, and aioli for a fresh and tangy twist.
Ingredients:
  • 4 bunches asparagus, woody ends trimmed
  • 250ml (1 cup) aioli mayonnaise
  • 100g shaved parmesan
  • 1 lemon, cut into 8 wedges
Instructions:
  • Bring a large saucepan of water to a gentle simmer over medium heat. Cook half of the asparagus for 3-4 minutes until bright green and tender crisp. Refresh in cold water, then drain. Repeat with the remaining asparagus.
  • Place the asparagus elegantly on a serving platter, generously drizzle with half of the delicious aioli, sprinkle with savory parmesan, and season with a pinch of salt and a grind of fresh pepper.
  • Garnish with lemon wedges and extra aioli, and enjoy right away.
