Ethiopian Atakilt Wat: A flavorful blend of carrots, onions, potatoes, and cabbage cooked with aromatic turmeric, cumin, and ginger.
Ingredients:
  • 0.33333334326744 cup olive oil
  • 4 carrots, sliced
  • 1 onion, thinly sliced
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon ground ginger
  • 1 small head cabbage, sliced
  • 2 cloves garlic, minced
  • 4 small yellow potatoes, cut into bite-size cubes
  • 0.25 cup water
Instructions:
  • In a large pot over medium heat, heat oil until shimmering. Add carrots and sauté until just tender, around 5 minutes. Stir in onion and cook until aromatic, about 2 minutes. Sprinkle in turmeric, cumin, salt, pepper, and ginger. Let spices toast until aromatic, roughly 1 minute.
  • Combine cabbage and garlic in the pot and cook until cabbage wilts, approximately 10 minutes. Add potatoes and water, then bring to a boil. Reduce heat to medium-low and simmer until potatoes are tender, about 30 minutes, stirring periodically.
