Atchara (Filipino Pickled Red Cabbage)

Sweet and tangy pickled red cabbage with coriander seeds and Thai chile, made using cold-flash-pickling method.
Ingredients:
1poundred cabbage, finely shredded
0.5 cupspiced cane vinegar
1tablespoonwhite sugar
2teaspoons whole coriander seeds
1.5 teaspoons groundblack pepper
1Thai chile, chopped
Instructions:
Combine cabbage with a flavorful mix of vinegar, sugar, coriander, pepper, and salt in a large bowl. Gently massage the spices into the cabbage by hand. Adjust seasoning to taste with more sugar or salt if needed. Mix in the Thai chile. Cover and refrigerate for at least 30 minutes until sugar and salt dissolve.
