A modern twist on traditional Sikh karha prashad - rich halwa with cardamom, raisins, and nuts.
Ingredients:
  • 0.5 cup ghee (clarified butter)
  • 0.25 cup cashews
  • 0.25 cup raisins
  • 1 cup whole wheat flour
  • 3 cups water
  • 1 cup sugar
  • 0.5 teaspoon ground cardamom
Instructions:
  • In a heavy-bottomed skillet over medium heat, melt the ghee. Cook the cashews and raisins in the ghee until the raisins plump and the cashews are lightly browned, around 5 minutes. Using a slotted spoon, remove the cashews and raisins from the skillet and set aside. Add the flour to the skillet and roast until brown and nutty, about 10 minutes.
  • While the water and sugar come to a boil in a saucepan until the sugar dissolves into a clear syrup, sprinkle in the cardamom. Gradually pour the syrup over the roasted flour, stirring continuously to prevent lumps. Cook until the halwa comes away from the sides of the pan, approximately 5 minutes. Transfer to a serving dish, spread evenly, and top with cashews and raisins before serving.
