Carol's amazing pies feature tangy Macintosh or Granny Smith apples that hold their shape beautifully when baked.
Ingredients:
  • 2 pounds Granny Smith apples
  • 1 cup white sugar
  • 0.5 cup brown sugar
  • 2 tablespoons butter
  • 1 tablespoon white sugar
  • 1 recipe pastry for a 9 inch double crust pie
Instructions:
  • Peel and slice fresh apples, then coat them in a delightful mixture of sugars, cinnamon, and flour. Set aside for later.
  • Roll the crust slightly larger to fit a 10-inch glass pie pan. Place the bottom crust in the pan, fill with the apple mixture, dot with butter, cover with the top crust, and crimp the edges together.
  • Preheat your oven to a toasty 450 degrees F (230 degrees C).
  • Moisten hands with water and gently wet the top of the pie. Sprinkle with extra sugar. Use a fork to create steam vents on the pie crust.
  • Start by baking the pie in a preheated oven for 15 minutes. Then, lower the temperature to 350 degrees F (175 degrees C) and bake for another 45 minutes until the crust turns golden brown. To prevent any spills, place a piece of foil under the pie plate. Finally, serve the pie warm.
