Family-favorite salad with perfectly cooked carrots, marinated for 12 hours. Garnish with colorful bell peppers and onions, serve over lettuce for a beautiful presentation.
Ingredients:
  • 2 pounds carrots, peeled and sliced into rounds
  • 1 (10.75 ounce) can condensed tomato soup
  • 1 cup white sugar
  • 1 cup vegetable oil
  • 0.75 cup white vinegar
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1 teaspoon mustard powder
  • 1 green bell pepper, seeded and diced
  • 1 red bell pepper, seeded and diced
  • 1 yellow bell pepper, seeded and diced
  • 1 large onion, chopped
Instructions:
  • In a large pot, simmer carrots in water until just tender. Drain and rinse in cold water to maintain a crisp texture.
  • Blend tomato soup, sugar, oil, vinegar, cayenne pepper, salt, and mustard powder in a food processor until creamy, about 3 minutes.
  • Combine carrots, green, red, and yellow bell peppers, and onion in a big bowl. Drizzle with dressing, mix well, cover, and chill overnight to enhance flavors. Time only makes this salad tastier.
