Aunt Dot's Brunswick Stew

Aunt Dot's inspired turkey chili - swap beef for turkey, throw in slow cooker for a delicious taste of Virginia.
Ingredients:
  • 2 cups water
  • 2 potatoes, diced
  • 1 onion, chopped
  • 1 (15 ounce) can peas, drained
  • 1 (15.25 ounce) can whole kernel corn, with liquid
  • 2 (14.5 ounce) cans peeled and diced tomatoes with juice
  • 1 pound ground turkey
  • 4 slices bacon, diced
  • 3 teaspoons salt, or to taste
  • 3 teaspoons ground black pepper, or to taste
  • 3 teaspoons garlic salt, or to taste
  • 1 tablespoon sugar
  • 1 tablespoon all-purpose flour
Instructions:
  • Place a saucepan over high heat and bring water to a vigorous boil. Add potatoes and cook until they are tender, which should take about 15 minutes.
  • Transfer the boiled potatoes and water into a large pot. Add in onion, peas, corn, tomatoes, ground turkey, and bacon. Once everything is in, bring to a boil, cover, and simmer on medium-low heat for 2 hours, stirring occasionally.
  • Season the stew with salt, pepper, garlic salt, and sugar. If the stew is too watery, thicken it by mixing flour with some of the stew liquid in a small cup, and then stirring the mixture into the stew. Simmer for 1 hour.
