Aunt Kathy's Old-Fashioned Potato Donuts

Delicious potato donuts, perfect with hot cocoa or coffee.
Ingredients:
  • 2 quarts vegetable oil for frying
  • 4 tablespoons shortening
  • 1 cup milk
  • 1 cup instant mashed potatoes
  • 4 cups all-purpose flour
  • 4 teaspoons baking powder
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground cinnamon
Instructions:
  • Preheat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C) until hot and shimmering.
  • In a bowl, cream together sugar and shortening using an electric mixer until smooth. Mix in milk, eggs, and vanilla extract until well combined. Fold in mashed potatoes. Add flour, baking powder, salt, nutmeg, and cinnamon. Stir with a sturdy spoon due to the thick consistency. Chill dough for 1 hour to make it easier to handle.
  • Dust the countertop with a touch of flour and cover the dough with plastic wrap. Roll it out to your preferred thickness, then either slice into strips or use a donut cutter for classic round shapes.
  • Gently submerge donuts in hot oil in batches. Fry until one side is golden brown, for 2 to 3 minutes. Flip and fry until the other side is golden, approximately 2 more minutes. Place on a paper towel-lined plate to drain. Repeat with the rest of the donuts.
  • Place the donuts onto a wire rack to allow them to cool.
