Generations-old Southern meatloaf with tangy BBQ sauce for moist perfection.
Ingredients:
  • 2 pounds ground beef
  • 1 onion, chopped
  • 1 cup ketchup
  • 1 cup Italian-seasoned bread crumbs
  • 1.5 teaspoons salt
  • 0.25 teaspoon ground black pepper
  • 1.5 cups ketchup
  • 3 tablespoons white wine vinegar
  • 3 tablespoons brown sugar
  • 2 tablespoons Dijon mustard
  • 2 teaspoons Worcestershire sauce
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously butter a 9x5-inch loaf pan.
  • Combine the beef, onion, 1 cup of ketchup, bread crumbs, eggs, salt, and pepper in a bowl until fully mixed. Firmly press the mixture into a loaf shape in the prepared pan.
  • Combine ketchup, water, vinegar, brown sugar, mustard, and Worcestershire sauce in a saucepan. Stir and cook over medium heat until the sauce is smooth and warm, approximately 10 minutes. Drizzle one-third of the sauce over the meatloaf.
  • Roast in the oven with a generous basting of sauce every 25 minutes until the meatloaf is fully cooked, about 1 to 1 1/2 hours. Check with an instant-read thermometer - it should read 160 degrees F (70 degrees C). Let it rest in the pan for 10 minutes before slicing.
