Savor a Lebanese family's authentic baked kibbeh - a savory meat pie with ground beef, bulgur, and pine nuts.
Ingredients:
  • 1 cup bulgur wheat
  • 2 cups boiling water
  • 0.5 cup finely chopped onion, divided
  • 2 teaspoons salt, divided
  • 1.5 teaspoons dried basil
  • 1 pound ground beef
  • 1 pound ground lamb, divided
  • 0.5 cup pine nuts
  • 0.25 stick salted butter
  • 0.5 cup cherry tomatoes, or to taste
  • 0.25 cup fresh mint leaves, or to taste
Instructions:
  • In a large bowl, place bulgur and cover it with boiling water. Allow it to sit until the water is absorbed, which typically takes around 30 minutes.
  • Preheat your oven to 350°F (175°C).
  • Combine the onion, salt, basil, and pepper with the softened bulgur. Mix in the ground beef and lamb until well combined. Split the mixture into two portions and press one portion evenly onto the bottom of a 12x7-inch baking dish.
  • Transfer the remaining portion onto a sheet of waxed paper and gently press it into a 12x7-inch rectangle; then, set it aside.
  • Sauté the 1/4 cup onion and 1/2 pound lamb in a skillet until golden brown, approximately 5 minutes. Remove any extra grease from the skillet, then mix in pine nuts and the remaining 1/2 teaspoon salt. Spread over the meat layer in the baking dish.
  • Place the second meat layer on top of the filling, removing and discarding the waxed paper. Score the top layer into diamond shapes by cutting diagonally in both directions with 3 inches between each cut, then add a dollop of butter to the center of each diamond.
  • Bake until golden brown for about 40 minutes in the preheated oven. Ensure internal temperature reaches at least 160°F (71°C) when checked with an instant-read thermometer. Finish by topping with cherry tomatoes and fresh mint.
