Homemade citrus cake with simple buttercream frosting - versatile for Easter bunny or other festive shapes.
Ingredients:
  • 1.75 teaspoons baking powder
  • 1.25 teaspoons salt
  • 1.3333333730698 cups milk at room temperature
  • 1.5 teaspoons lemon extract
  • 1.25 teaspoons vanilla extract
  • 0.75 teaspoon orange extract
  • 1.125 cups unsalted butter at room temperature
  • 4 eggs at room temperature
  • 0.5 cup vegetable shortening
  • 0.5 cup butter at room temperature
  • 4 cups confectioners' sugar
  • 2 tablespoons milk at room temperature
  • 1 teaspoon clear vanilla extract
Instructions:
  • Position an oven rack in the lower third of the oven.
  • Preheat your oven to 325°F (165°C).
  • Prepare your cake mold pan (using your favorite shape like a bunny or train) by greasing and flouring it with vegetable shortening.
  • Combine the flour, baking powder, and salt by sifting them together in a bowl.
  • Combine 1 1/3 cups of milk, lemon extract, 1 1/4 teaspoons of vanilla extract, and orange extract in a separate bowl.
  • In a large mixing bowl, use an electric mixer on medium speed to beat unsalted butter until creamy and smooth, about 1 to 2 minutes. Add white sugar and beat until light and fluffy, about 5 more minutes. Remember to scrape the sides of the bowl occasionally.
  • Add eggs one at a time, ensuring each egg is fully incorporated before adding the next.
  • Gradually mix in flour mixture and milk mixture on low speed, starting and finishing with flour mixture. Be mindful not to overmix; remember to scrape the bowl occasionally.
  • Evenly distribute the batter into the greased cake pan.
  • Bake in the preheated oven for 30 to 45 minutes, or until lightly browned and a toothpick inserted into the middle of the cake comes out clean.
  • After baking, let the cake sit in the pan on a wire rack for 15 minutes. Invert the pan to release the cake and let it cool completely on the wire rack for 3 to 4 hours.
  • Combine vegetable shortening, butter, confectioners' sugar, milk, and clear vanilla extract in a bowl and beat until the frosting is smooth and creamy.
  • Transfer the frosting into a sturdy resealable plastic bag, squeezing it to one corner. Snip a small hole in the corner, seal the bag, and effortlessly pipe the frosting onto the cooled cake in your preferred design.
