Delicious rhubarb muffins with fresh rhubarb, walnuts, and a sweet cinnamon-sugar topping.
Ingredients:
  • 2.5 cups flour
  • 1.25 cups brown sugar
  • 1 cup buttermilk
  • 0.5 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1.5 cups diced rhubarb
  • 0.5 cup chopped walnuts
  • 0.33333334326744 cup white sugar
  • 1 tablespoon melted butter
  • 1 teaspoon ground cinnamon
Instructions:
  • Preheat the oven to 350°F (175°C) while preparing two 12-cup muffin pans by greasing or lining with paper cups.
  • For the muffins: Combine flour, baking soda, baking powder, and salt in a medium bowl. In a separate bowl, use an electric mixer to blend brown sugar, buttermilk, oil, egg, and vanilla until smooth. Gently mix in the dry ingredients until just combined. Fold in rhubarb and walnuts. Fill the muffin cups almost to the top with the batter.
  • Prepare the streusel by combining sugar, melted butter, and cinnamon in a small bowl; generously sprinkle approximately 1 teaspoon of streusel over each muffin.
  • Bake until muffins spring back when lightly pressed, about 25 minutes in the preheated oven. Allow them to cool in the pans for at least 10 minutes before removing.
