Inherited a beloved recipe from my baking aunt, whose passion inspired me to find therapeutic joy in the kitchen.
Ingredients:
  • 0.75 cup shortening
  • 1.5 cups white sugar
  • 2.75 cups cake flour
  • 4 egg whites
  • 1 teaspoon vanilla extract
  • 1 tablespoon buttermilk
  • 1 teaspoon baking powder
  • 1.5 cups buttermilk
  • 0.5 teaspoon baking soda
  • 1 teaspoon almond extract
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and grease and flour a 13x9 inch square cake pan.
  • Combine the shortening and sugar until creamy, then mix in 1 tablespoon of buttermilk.
  • Sift the flour thrice, then mix in the baking powder and salt.
  • Mix 1 1/2 cups of tangy buttermilk with 1/2 teaspoon of baking soda. Gradually blend into the shortening mixture along with the flour, alternating between the two.
  • Whip egg whites until fluffy peaks form, gently fold into the batter. Add vanilla and almond extracts, mix well. Transfer batter into the pan.
  • Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes. Let cool and frost with your favorite frosting, adding 1 teaspoon of orange extract if desired.
