Moist cinnamon cookies with maple glaze and white chocolate frosting.
Ingredients:
  • 1.5 cups persimmon pulp
  • 0.5 cup butter, softened
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • 0.5 teaspoon salt
  • 1 cup chopped pecans
  • 1 cup golden raisins
  • 1 cup confectioners' sugar
  • 0.25 cup maple syrup
  • 1 tablespoon melted butter
  • 0.5 teaspoon vanilla extract
  • 0.125 teaspoon salt
  • 2 green belt candy strips
  • 1 cup white chocolate chips
  • 1 teaspoon shortening (such as Crisco®)
  • 36 red candy-coated chocolate pieces (such as M&M's®)
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a baking sheet with parchment paper or a Silpat® nonstick baking mat.
  • Incorporate persimmon pulp into a small bowl and gently fold in the baking soda to help the mixture thicken.
  • Using an electric mixer, beat white sugar and 1/2 cup butter in a large bowl until light and fluffy. In a separate bowl, combine flour, cinnamon, cloves, nutmeg, and salt.
  • Combine the egg with the persimmon mixture. Then, mix the persimmon mixture and flour mixture into the creamed butter. Fold in the pecans and raisins until evenly distributed in the batter.
  • Scoop batter onto the baking sheet using a medium cookie scoop.
  • Bake in the preheated oven for 13-15 minutes until lightly browned and puffy. Cool completely on wire racks for about 30 minutes before enjoying.
  • In a bowl, combine confectioners' sugar, maple syrup, melted butter, vanilla extract, and salt until a smooth maple glaze forms. Place a sheet of parchment paper under a wire rack to catch drips. Drizzle the glaze onto the cookies using a spoon. Allow the glaze to harden for about 30 minutes.
  • Use kitchen scissors to turn the green belt candy into petite leaf shapes. In a microwave-safe glass or ceramic bowl, melt white chocolate with shortening in the microwave at 15-second intervals, stirring well each time, for a total of 1 to 3 minutes.
  • Drizzle melted white chocolate over each cookie using a spoon. Place a red candy-coated chocolate piece in the center of each cookie and garnish with a green basil leaf on each side. Allow the frosting to harden for approximately 30 minutes.
