Authentic Chicken Adobo

Tender chicken marinated in tangy vinegar and soy sauce, simmered with garlic and spices. Perfect served over fluffy white rice.
Ingredients:
  • 2 cups coconut vinegar
  • 0.5 cup soy sauce
  • 1 head garlic, peeled and coarsely chopped
  • 10 bay leaves
  • 1 tablespoon garlic powder
  • 1.5 teaspoons ground black pepper
  • 1.5 teaspoons annatto powder
  • 5.5 pounds cut-up chicken parts
  • 3 tablespoons vegetable oil, divided
Instructions:
  • In a large bowl, mix together vinegar, soy sauce, 1 head of garlic, bay leaves, garlic powder, black pepper, and 1 1/2 teaspoons of annatto powder. Add chicken, toss to ensure even coating with the marinade, cover, and refrigerate for a minimum of 4 hours.
  • Take the chicken out of the marinade and gently dry it off, keeping the marinade aside for later use.
  • In a large skillet over medium-high heat, heat 2 tablespoons of vegetable oil. Brown chicken on both sides in the hot oil for about 4 minutes each. Remove skillet from heat.
  • In a small skillet over medium heat, warm up 1 tablespoon of vegetable oil. Sauté 1 head of garlic until nicely browned, around 3 minutes. Stir in 1 1/2 teaspoons of annatto powder and let it simmer for 3 minutes.
  • Drizzle annatto mixture over chicken, along with reserved marinade. Simmer covered until chicken is tender for about 45 minutes. Uncover and cook for an additional 10 minutes until sauce slightly thickens.
