Try a flavorful Spanish paella Valenciana with chicken and rabbit – a traditional twist on the classic rice dish, no seafood included.
Ingredients:
  • 1 tablespoon olive oil
  • 0.5 (4 pound) whole chicken, cut into 6 pieces
  • 0.5 (2 pound) rabbit, cleaned and cut into pieces
  • 1 head garlic, cloves separated and peeled
  • 1 medium tomato, finely chopped
  • 1 (15.5 ounce) can butter beans
  • 0.5 (10 ounce) package frozen green peas
  • 0.5 (10 ounce) package frozen green beans
  • 1 teaspoon mild paprika, or to taste
  • 6 cups water, or as needed
  • salt to taste
  • 1 pinch saffron threads, or to taste
  • 1 pinch dried thyme, or to taste
  • 1 pinch dried rosemary, or to taste
  • 3 cups short-grain white rice, or as needed
Instructions:
  • Preheat a paella pan over medium-high heat, drizzle with olive oil. Sear chicken, rabbit, and garlic until golden. Push the meats to the edges, then toss in tomato, butter beans, peas, and green beans. Sprinkle with paprika, combine thoroughly.
  • Fill the paella pan nearly to the brim with water, measuring as you pour for rice. Bring to a boil, then simmer for 1 hour to create a flavorful broth.
  • Season with a generous pinch of salt, a hint of saffron for a vibrant yellow hue, and a sprinkle of fragrant thyme and rosemary. Add half as much rice as the water in the pan. Cover, reduce heat to low, and cook until all liquid is absorbed, around 20 minutes.
