Whip up a delicious bowl of Greek lemon chicken soup for a flavorful winter warmer.
Ingredients:
  • 500g chicken breast fillets
  • 1275.00 gm chicken style liquid stock
  • 100.00 gm medium-grain rice
  • 1-42.00 gm lemon juice
  • Parsley leaves, to serve
  • Olive oil, to drizzle
Instructions:
  • Poach the chicken in flavorful stock, then transfer to a plate.
  • Simmer rice in flavorful stock until perfectly tender.
  • In a heatproof bowl, vigorously whisk together eggs and 1-2 tablespoons of fresh lemon juice. Gradually incorporate 1 cup of the stock mixture, then add this mixture to the remaining stock.
  • Stir and cook gently for 2-3 minutes without boiling. Add seasoning. Shred the chicken and place in serving bowls. Ladle soup over the chicken. Finish with a sprinkle of fresh parsley and a drizzle of olive oil.
