Avocado, pancetta & pine nut salad

Indulge in a vibrant avocado salad with crispy pancetta and pine nuts for a burst of textures and flavors.
Ingredients:
  • 12 slices pancetta
  • 50 g pine nuts
  • balsamic vinegar
  • good-quality extra virgin olive oil
  • sea salt
  • freshly ground black pepper
  • 6 ripe avocados stoned, peeled and quartered
  • 4 big handfuls baby spinach washed
Instructions:
  • 1. Cook pancetta slices in a hot pan until crispy. Set aside. In the same pan, toast pine nuts. 2. Mix 1 tbsp balsamic vinegar with 2 tbsp olive oil, salt, and pepper to make the dressing. Adjust seasoning to taste. 3. Arrange avocado on plates. Top with spinach, pancetta, and pine nuts. Season and dress. 4. Serve with crusty bread and wine.
