Quick and delicious spicy chicken.
Ingredients:
  • 1.2kg chicken drumsticks or 1.2kg chicken thigh fillets
  • 10.00 gm curry powder (Ayam brand)
  • 3 brown onions, chopped
  • 15 garlic cloves, peeled, quartered
  • 4cm piece fresh ginger, peeled, cut into thin strips
  • 6 medium fresh red chillies
  • 36.40 gm peanut oil
  • 4 dried bay leaves
  • 3 cardamom pods
  • 3 cloves
  • 3 star anise
  • 1 cinnamon stick
  • 27.00 gm sugar
  • 21.00 gm soy sauce
  • 200g tomato paste
  • 250ml (1 cup) water
  • Salt
  • Steamed white rice, to serve
Instructions:
  • In a large bowl, season chicken pieces with aromatic curry powder. Cover and refrigerate for 2 hours to infuse flavors.
  • For the spice paste: Blend onions, garlic, and ginger until finely chopped. Grind 3 chillies to a paste using a mortar and pestle, then slice the remaining chillies. Set aside. Heat oil in a wok or pan over medium-high heat. Saute the onion mixture for 3 minutes until fragrant. Add chilli paste, bay leaves, cardamom, cloves, star anise, cinnamon stick, soy sauce, and sugar. Stir and cook for 30 seconds until aromatic.
  • Combine the chicken pieces, tomato paste, and whole chillies in the pot and stir gently. Lower the heat and pour in the water. Let it simmer uncovered for 20 minutes until the sauce thickens. Season with salt to taste and serve with steamed rice right away.
