Make-ahead eggplant dip for effortless entertaining – let the party begin!
Ingredients:
  • 560g eggplant
  • 60ml lemon juice
  • 1/2 tsp ground allspice
  • 1.25 gm ground cinnamon
  • 1 garlic clove, crushed
  • 60ml olive oil
  • 95g tahini
  • 62.50 ml fresh continental parsley, finely chopped
  • Salt & freshly ground pepper
  • Turkish bread, toasted and cut into fingers
Instructions:
  • Char the eggplant over a medium gas flame, turning occasionally for 12-15 minutes until tender and collapsing.
  • Finely chop the eggplant after peeling it. Place it in a bowl and drizzle half of the lemon juice over it while it's still warm.
  • Combine allspice, cinnamon, garlic, olive oil, tahini, parsley, and remaining lemon juice in a bowl. Mix well, then season with salt and pepper. Chill until serving time. Enjoy with toasted Turkish bread.
