Make-ahead eggplant dip for effortless entertaining – let the party begin!
Ingredients:
560g eggplant
60ml lemon juice
1/2 tsp ground allspice
1.25 gm ground cinnamon
1garlicclove, crushed
60ml olive oil
95g tahini
62.50 ml fresh continental parsley, finely chopped
Salt & freshly ground pepper
Turkish bread, toasted and cut into fingers
Instructions:
Char the eggplant over a medium gas flame, turning occasionally for 12-15 minutes until tender and collapsing.
Finely chop the eggplant after peeling it. Place it in a bowl and drizzle half of the lemon juice over it while it's still warm.
Combine allspice, cinnamon, garlic, olive oil, tahini, parsley, and remaining lemon juice in a bowl. Mix well, then season with salt and pepper. Chill until serving time. Enjoy with toasted Turkish bread.
