Irresistible lemon poppy seed muffins, a guaranteed crowd pleaser!
Ingredients:
  • 1.5 cups all-purpose flour
  • 2 teaspoons poppy seeds
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.66666668653488 cup sugar
  • 0.33333334326744 cup butter, melted
  • 1 egg, lightly beaten
  • 1 egg yolk, beaten
  • 0.66666668653488 cup sour cream
  • 0.75 teaspoon vanilla extract
  • 0.5 teaspoon lemon peel
  • 0.25 teaspoon lemon extract
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a 12-cup muffin tin by greasing the cups or lining them with paper liners.
  • Combine the flour, poppy seeds, baking powder, and baking soda in a bowl and stir well.
  • In a large bowl, mix together sugar and butter until creamy. Gradually add the whole egg, then the egg yolk, making sure to fully incorporate each before adding the next.
  • Mix sour cream, vanilla, lemon peel, and lemon extract with the sugar until fully combined. Gently fold in the flour mixture until just incorporated. Divide the batter evenly into the muffin cups, filling them about 3/4 of the way full.
  • Bake in the preheated oven for about 15 minutes until they turn golden and the tops spring back when lightly pressed. Allow to cool for 5 minutes before transferring to wire racks.
