Festive potato salad with mint and spring onion for a simple Christmas dish.
Ingredients:
  • 400g pkt baby potatoes with butter & parsley
  • 500g pkt Brand baby peas
  • 4 spring onions, ends trimmed, thinly sliced
  • 125.00 ml mint leaves
Instructions:
  • Prepare the potatoes according to the package instructions, then transfer them to a heatproof bowl.
  • Cook peas in a large saucepan of boiling water for 2-3 mins until heated through. Drain, return to the pan, lightly crush with a wooden spoon, mix in the potato mixture, spring onion, and mint. Toss to combine, transfer to a serving dish, and serve right away.
