Try this classic concoction known as Rumtopf or Old Boys' Jam, originating from Germany and popularized at Eton College.
Ingredients:
  • 500g strawberries
  • 500g blueberries
  • 500g raspberries
  • 500g blackberries
  • 860.00 gm caster sugar
  • 750ml (3 cups) eau de vie (see note) or brandy, kirsch or rum
Instructions:
  • In a large bowl, combine the berries and sugar with a gentle stir. Cover the bowl and refrigerate overnight.
  • Thoroughly clean and dry a 3-litre jar or smaller jars with screw-top lids to prevent bacterial growth.
  • Carefully incorporate the eau de vie into the berry mixture, then transfer the mixture into jars, ensuring the berries are fully submerged in the liquid. Adjust by adding more alcohol if needed to cover all the fruit, depending on the amount of juice released from the fruit.
  • Cover with the lid and refrigerate overnight to preserve freshness for up to 3 weeks.
